Savory parsnip-potato patties, ideal with juicy pork chops.
Ingredients:
  • 500g parsnip
  • 250g potato
  • Olive oil cooking spray
  • 4 pork loin chops
  • 40.00 ml plain flour
  • 1 egg, lightly beaten
  • 40.00 ml chopped fresh chives
  • Pinch of nutmeg
  • 36.40 gm olive oil
  • Apple sauce, to serve
  • Steamed broccoli, to serve
Instructions:
  • In a large saucepan, combine parsnip and potato, cover with cold water, and bring to a boil over medium-high heat. Reduce heat to low and simmer uncovered for 20 minutes until the parsnip is tender. Drain the vegetables, return them to the pan, mash until smooth, and transfer to a heatproof bowl to cool slightly.
  • Heat a large frying pan over medium-high heat and spray it with oil. Season the chops with salt and pepper, then cook them for 5 minutes on each side or until they reach your desired level of doneness. Transfer the chops to a plate, cover them with foil, and let them rest for 5 minutes before serving.
  • Prepare the frying pan by washing and drying it. Combine flour, egg, chives, and nutmeg with the parsnip mixture. Season with salt and pepper, then stir to mix well. Heat oil in the pan over medium-high heat. Shape the parsnip mixture into 8 patties using lightly floured hands. Cook the patties in batches for 1 to 2 minutes per side until golden and cooked through. Transfer the patties to a plate lined with paper towel to drain.
  • Arrange the patties on plates. Place the chops on top of the patties and add a spoonful of apple sauce. Serve alongside the broccoli.
