Simplify asparagus: Roast thick spears with olive oil, garlic, salt, pepper, and lemon juice for a zesty dish.
Ingredients:
  • 1 pound asparagus spears (thick spears are best for roasting)
  • 1-2 tablespoons extra virgin olive oil
  • Kosher Salt
  • Freshly grated black pepper
  • Lemon juice (or balsamic vinegar)
Instructions:
  • Preheat your oven to 400°F (205°C. Rinse the asparagus and trim off any tough ends. Optionally, peel the thicker ends with a vegetable peeler.
  • Prepare the asparagus for roasting: Line a roasting pan with foil and place the asparagus spears in a single layer. Drizzle with olive oil, sprinkle with salt, pepper, and minced garlic, then coat the spears evenly by rubbing them with the olive oil mixture.
  • Roast the asparagus in the oven at 400°F (205°C) for about 10 minutes, or until they are lightly browned and tender when pierced with a fork, adjusting for oven variations and spear thickness.
