"Simply roasted asparagus and mushrooms tossed in olive oil and fragrant rosemary, crispy and deliciously tender."
Ingredients:
  • nonstick cooking spray
  • 1 bunch fresh asparagus, trimmed
  • 0.5 pound fresh mushrooms, quartered
  • 2 teaspoons olive oil
  • 2 sprigs fresh rosemary, minced
  • kosher salt and freshly ground black pepper to taste
Instructions:
  • Preheat your oven to 450 degrees F (230 degrees C) and lightly grease a baking tray using nonstick spray.
  • Combine asparagus and mushrooms in a bowl. Drizzle with olive oil, sprinkle with rosemary, salt, and pepper, and toss to coat evenly. Spread vegetables out on the tray in a single layer.
  • Roast the asparagus in the preheated oven until tender, approximately 15 minutes.
