Flaky pastry treats with a golden surprise inside, bursting with flavor.
Ingredients:
  • 1 x 180g can tuna in oil, drained, flaked
  • 20.00 ml drained capers, coarsely chopped
  • 62.50 ml chopped fresh continental parsley
  • 1 tsp harissa (see note)
  • 4 square (215 x 215mm) frozen spring roll wrappers, just thawed
  • 4 eggs
  • Light olive oil, to shallow-fry
  • Fresh continental parsley sprigs, to decorate
  • Lemon wedges, to serve
Instructions:
  • In a medium frying pan over medium heat, warm the oil. Sauté the onion for 5 minutes until soft, stirring occasionally. Add tuna, capers, parsley, and harissa. Mix well and let cool for 5 minutes.
  • Lay 1 spring roll wrapper on a clean work surface. Spread one-quarter of the tuna mixture and create a well in the middle. Crack an egg into the well. Lightly brush the pastry edges with water. Fold diagonally to seal the filling. Repeat with the rest of the ingredients.
  • Pour just the right amount of light olive oil into a frying pan to reach 2cm up the side of the pan. Warm over medium heat. Place 1 pastry triangle in the pan and cook until golden, turning once, for about 5 minutes. Move to a tray lined with paper towel. Repeat with the rest of the pastry triangles in 3 more batches, making sure to reheat the oil between batches. Enjoy with fresh parsley and lemon wedges.
