Boost pasta dinner with protein-packed broad beans.
Ingredients:
  • Parmesan shavings, to serve
  • 350g dried pasta curls (San Remo brand)
  • 320g (2 cups) frozen broad beans
  • 60mls (1/4 cup) extra virgin olive oil
  • 1 medium brown onion, finely chopped
  • 4 garlic cloves, thinly sliced
  • 82.50 ml chopped fresh continental parsley
  • Salt & ground black pepper, to taste
Instructions:
  • Prepare the pasta in a generously salted pot of boiling water according to the package instructions until it's perfectly cooked. Drain the pasta and keep it covered to maintain its warmth.
  • Cook beans according to package instructions until they are just tender. Drain, peel off the skins, and set aside.
  • In a large heavy-based frying pan over medium heat, heat the olive oil until shimmering. Cook the onion and garlic for 5 minutes, stirring occasionally, until the onion softens slightly. Increase the heat to high, add the beans, and cook for 2-3 minutes until heated through. Finally, stir in the parsley.
  • Combine the bean mixture with the pasta, ensuring an even mix. Taste the dish and adjust the seasoning with salt and pepper as needed. Finish by topping it off with delicate Parmesan shavings before serving.
