Savory beef and kidney bean soup with tomatoes and garlic, served with crusty Italian bread for a satisfying weeknight dinner.
Ingredients:
  • 1 tablespoon vegetable oil
  • 0.5 pound ground beef
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 1 envelope dry vegetable soup mix
  • 1 cup water
  • 1 (28 ounce) can diced tomatoes
  • 1 (14.5 ounce) can red kidney beans, drained
  • 0.25 cup uncooked star-shaped pasta
Instructions:
  • In a large stockpot over medium-high heat, sizzle the oil. Add ground beef, breaking it apart and sear until golden. Transfer beef out, keeping the flavorful drippings in the pot.
  • Saute onion and garlic in oil until translucent. Add tomatoes, kidney beans, vegetable soup mix, and water. Simmer over low heat for 40 minutes.
  • Stir in pasta stars, cover, and simmer for an additional 20 minutes or until pasta reaches desired tenderness. Adjust consistency with more water if needed.
