Garbanzo Tomato Pasta Soup

Satisfying vegetarian garbanzo bean pasta bowl infused with garlic and tomato flavors. Packed with essential proteins for vegetarians.
Ingredients:
  • 3 (14.5 ounce) cans vegetable broth
  • 0.75 cup small seashell pasta
  • 1 tablespoon olive oil
  • 1 (15 ounce) can garbanzo beans, drained and rinsed
  • 1 (28 ounce) can whole peeled tomatoes, chopped, juice reserved
  • 0.5 teaspoon dried basil
  • 0.5 teaspoon dried thyme
Instructions:
  • In a large pot, simmer vegetable broth until it boils. Stir in pasta and cook for 8 to 10 minutes until al dente.
  • Heat oil in a small skillet over medium heat until it shimmers. Cook onions and garlic until they turn translucent. Mix them into the pasta along with garbanzo beans, tomatoes, basil, thyme, salt, and pepper. Heat the dish through and serve hot.
