Indulgent creamy blue cheese enhances this broccoflower side dish.
Ingredients:
  • 1kg broccoflower
  • 50g butter
  • 35g plain flour
  • 375ml milk
  • 100g parmesan
  • 1 slice 9 Grain bread, crusts removed
  • 75g blue cheese, crumbled
  • 18.20 gm olive oil
  • Freshly ground black pepper
Instructions:
  • Preheat the oven to 200°C. Quickly blanch the broccoflower in salted boiling water for 1 minute, then drain thoroughly. Place in a 6-cup oven-proof dish and keep aside.
  • In a saucepan over medium heat, melt butter. Add flour and stir for 1 minute. Slowly pour in milk while whisking continuously. Cook for 5 minutes until the mixture boils and thickens. Take off the heat and mix in half of the parmesan. Spread over the broccoflower.
  • Dice the bread into small, chunky crumbs and combine it in a bowl with the remaining parmesan, blue cheese, and olive oil. Mix thoroughly, then evenly spread the mixture over the gratin. Bake for approximately 10 minutes until it turns golden. Season generously with pepper and serve hot.
