Broccoli, green bean, bacon and almond salad

Vibrant and delicious mixed salad with varied textures and flavors.
Ingredients:
  • 750.00 ml broccoli florets
  • 100g green beans, trimmed
  • 4 rashers bacon, rind removed and thinly sliced
  • 35g almond
  • 195.00 gm buttermilk
  • 39.60 gm whole egg mayonnaise
  • 1 small garlic clove, crushed
  • 40.00 ml chopped chives
  • salt and cracked black pepper
Instructions:
  • Cook the broccoli in boiling water until slightly tender, then transfer to ice water to stop the cooking process. Drain and set aside.
  • Blanch the beans in the saucepan, then transfer to ice water to cool. Drain and set aside with the broccoli.
  • 1. Preheat a non-stick frying pan over medium-high heat and coat with oil spray. Cook bacon until golden and crisp, about 3-4 minutes. Transfer to a paper towel-lined plate. 2. Wipe the pan clean and return to heat. Toast almonds until golden, about 1-2 minutes.
  • Combine buttermilk, mayonnaise, garlic, chives, salt, and pepper in a bowl, whisk until smooth.
  • Combine broccoli, beans, bacon, and almonds in a serving bowl. Gently toss ingredients together. Drizzle with dressing before serving.
