Exciting twist: Swap in penne or rigatoni for a delicious alternative to orecchiette in this recipe.
Ingredients:
  • 2 large heads of broccoli
  • 2 large cloves of garlic
  • 8 anchovy fillets in oil, from sustainable sources
  • 4 good knobs of butter
  • 2-4 small dried red chillies to taste
  • 450 g dried orecchiette
  • Parmesan cheese
Instructions:
  • Prep broccoli by separating florets and peeling/chopping the stalk. Cook chopped stalk with garlic, anchovies, and butter in a pan. Add chili, cover, and cook for 8-10 minutes. Cook pasta separately. For the last 4 minutes, add broccoli florets to the pasta. Drain both, reserving some cooking water. Combine pasta, broccoli, seasonings, rest of the butter, Parmesan, and cooking water in a pan. Toss well and serve, garnished with more Parmesan.
