Broccoli, anchovy, and garlic pasta with a delightful blend of sweet, salty, and spicy flavors.
Ingredients:
  • 1 head broccoli, cut into florets
  • 3 tablespoons olive oil, divided
  • 2 pinches salt to taste
  • 0.5 (16 ounce) package linguine pasta
  • 6 anchovy fillets in olive oil, drained
  • 3 cloves garlic, thinly sliced
  • 0.5 teaspoon red pepper flakes, or more to taste
  • 1 pinch ground black pepper to taste
Instructions:
  • Position the oven rack 8 inches from the heat source and preheat the broiler. Coat broccoli with 1 tablespoon of olive oil and salt in a bowl; then spread it out on a large baking sheet.
  • Place the broccoli in the preheated oven and broil until tender and slightly browned, about 5 to 10 minutes.
  • Bring generously salted water in a large pot to a vigorous boil. Cook linguine until al dente, around 11 minutes.
  • In a large skillet over low heat, warm 1 tablespoon of olive oil. Add anchovies, garlic, and red pepper flakes; sauté until anchovies melt into the oil, for 3 to 5 minutes. Season with pepper, then stir in the roasted broccoli.
  • After draining the pasta, transfer it back to the pot. Add the broccoli-anchovy mixture and evenly combine. Finish by drizzling the remaining olive oil on top.
