Broccoli, chilli and prawn pizzas

Spicy prawn and broccoli pizzas with creamy ricotta and a kick of chilli - an irresistible party hit!
Ingredients:
  • 69.38 gm tomato paste
  • 312.50 ml pizza cheese
  • 150g broccoli, cut into small florets
  • 82.50 ml semi-dried tomatoes, drained, chopped
  • 16 medium green prawns, peeled, deveined (tails intact)
  • 120.00 gm smooth ricotta
  • 1/2 tsp dried chilli flakes
  • Lemon wedges, to serve
  • 375.00 ml plain flour, plus extra for dusting
  • 7g sachet instant dry yeast
  • Large pinch of caster sugar
  • 36.40 gm extra virgin olive oil
  • 165.00 gm warm water
Instructions:
  • Preheat the oven to 220C/200C fan-forced and prepare 2 large baking trays with baking paper.
  • 1. In a bowl, mix flour, yeast, sugar, salt, and pepper together. Create a well in the center. 2. Pour in oil and warm water, then combine to form a soft, sticky dough. 3. Transfer dough onto a floured surface and knead gently until smooth. 4. Divide the dough into 4 equal parts. 5. Roll out one portion into an oval shape measuring 11cm x 21cm. 6. Place on a prepared tray and repeat with the remaining dough to make a total of 4 oval crusts.
  • Spread tomato paste on each pizza, then sprinkle half of the cheese on top. Add broccoli, tomatoes, and prawns. Top with the remaining cheese and dollop with ricotta. Season with salt and pepper.
  • Bake pizzas until bases are golden and cooked through (10-15 minutes). Sprinkle with chili, and serve with lemon wedges.
