Create a delicious meal with minimal ingredients and prep time.
Ingredients:
  • 450g pkt Hokkien Noodles
  • 1kg raw prawns thawed, peeled leaving tails intact, deveined
  • 1 head broccoli, cut into small florets
  • 200g snow peas, trimmed, halved lengthways
  • 150g pkt sweet chilli and lemongrass stir-fry sauce
Instructions:
  • Place the noodles in a large heatproof bowl and cover with boiling water. Let them soak for 2 minutes, then drain well.
  • Spritz a large frying pan with olive oil spray and heat over high heat. Add half of the prawns and cook, tossing, for 2-3 minutes until they curl and change color. Transfer to a heatproof bowl. Repeat with the rest of the prawns.
  • Add the prawns back to the pan along with the broccoli and snow peas and cook while tossing for 2 minutes. Then add the noodles and the infusion paste and stir-fry sauce from the packet. Continue to cook while tossing until everything is heated through. Serve the meal by dividing it among serving bowls.
