Whip up BBQ sweet chilli prawn soba noodle stir-fry for a simple, speedy dinner.
Ingredients:
  • 1kg Fresh Banana Prawns, peeled leaving tails intact, deveined
  • 22.00 gm sweet chilli sauce
  • 270g pkt soba noodles
  • 200g green beans, trimmed, halved
  • 120g pea
  • 125.00 ml mint leaves
  • 125.00 ml coriander leaves
  • 24.40 gm fish sauce
  • 21.00 gm lime juice
  • 1 garlic clove, crushed
Instructions:
  • Combine prawns, sweet chilli sauce, and 1 tablespoon of oil in a bowl, toss to coat, and season. Grill prawns on a barbecue or chargrill over medium-high heat for 2 minutes on each side or until cooked through.
  • While you're waiting, bring a large saucepan of water to a boil. Add the noodles and cook for 3 minutes. Next, toss in the beans and peas and cook for an additional minute or until the beans are tender. Drain thoroughly before serving.
  • On a large serving platter, artfully arrange the noodle mixture, prawns, mint, and coriander. Season to taste. In a small bowl, mix together the fish sauce, lime juice, garlic, and remaining oil. Drizzle this flavorful mixture over the prawns before serving.
