Crumbed prawns with spicy soba noodles

Quick and flavorful meal: Soba noodles with crispy prawns and zesty dressing.
Ingredients:
  • 270g soba noodles
  • 1 tsp instant dashi*
  • 80ml soy sauce
  • 20.00 ml sake*
  • 20.00 gm caster sugar
  • 1 eggwhite
  • 16 medium green prawns, shelled, deveined, tails intact
  • 250.00 ml panko breadcrumbs* or regular breadcrumbs if unavailable
  • Vegetable oil, to deep-fry
  • Spring onions, sliced on the diagonal, to garnish
  • Sliced nori sheets, to serve*
Instructions:
  • Prepare the soba noodles following the directions on the package. Once cooked, drain, rinse, and keep them aside.
  • In a pot, combine dashi, soy sauce, sake, sugar, and 1 liter of water. Bring it to a boil, then reduce the heat and simmer for 10 minutes. Meanwhile, beat egg whites until frothy. Dip prawns in beaten egg, then coat them in breadcrumbs.
  • Fill a saucepan or deep-fryer halfway with oil and heat over high heat. Once hot, carefully add prawns and fry for 1-2 minutes on each side until they turn golden brown. Cook in batches if needed.
  • Evenly distribute noodles into 4 bowls, then generously pour the flavorful dashi mixture over them before topping each bowl with succulent prawns.
  • Top with fresh spring onions for a pop of color and serve the nori on the side.
