Hearty main meal with tom yum, soba noodles, tofu, cherry tomatoes, bok choy, prawns, and bean sprouts.
Ingredients:
  • 270g soba noodles
  • 40.00 ml tom yum paste
  • 2L (8 cups) vegetable liquid stock
  • 12.80 gm coconut sugar
  • 250g punnet cherry tomatoes, halved
  • 10 button mushrooms, sliced
  • 4 baby bok choy, halved lengthways
  • 24.40 gm fish sauce
  • 21.00 gm soy sauce
  • 12 green prawns, peeled, tails intact, deveined
  • 100g firm silken tofu, cut into 1cm pieces
  • 125.00 ml bean sprouts
  • 125.00 ml fresh coriander, chopped
  • 125.00 ml fresh mint leaves, chopped
  • 1 lime, cut into wedges
Instructions:
  • Prepare noodles as directed on the packet, then transfer them to serving bowls. In a saucepan over medium-high heat, mix tom yum paste and stock together.
  • 1. Bring the mixture to a boil, then stir in sugar, cherry tomatoes, mushrooms, and bok choy. Cook for 3-4 minutes, then season with fish sauce and soy sauce to your liking. Finally, add the prawns and cook for 1 more minute until just cooked.
  • Arrange the tofu in serving bowls, then generously pour the soup over it. Garnish with bean sprouts and herbs, and accompany with lime wedges for a burst of flavor.
