Spicy prawn soup

Spice up the night with fiery prawn soup.
Ingredients:
  • 100g rice stick noodles
  • 20.00 ml tom yum paste (see Notes)
  • 1L (4 cups) chicken style liquid stock (see notes)
  • 100g green bean
  • 150g small button mushrooms, halved
  • 20 green prawns, peeled, deveined, tails intact
  • 12 cherry tomatoes, halved
  • Coriander leaves, to serve
  • Lime wedges, to serve
Instructions:
  • Place noodles in a large heatproof bowl and cover with boiling water. Let soak for 5 minutes until softened. Drain and set aside.
  • Cook the paste in a large saucepan over medium heat for 1-2 minutes until it becomes fragrant.
  • Pour in the stock and bring it to a boil. Lower the heat to medium-low, stir in the beans and mushrooms, and let it simmer for 1 minute. Finally, add the prawns and cook for an additional 1-2 minutes until the prawns are cooked through.
  • In individual bowls, layer noodles, tomatoes, and pour over the soup. Garnish generously with fresh coriander, serve with a lime wedge, and enjoy!
