Quick and delicious Malaysian soup bursting with fresh flavors.
Ingredients:
  • 100g (1/3 cup) Malaysian Laksa Paste
  • 400ml can coconut milk
  • 250ml (1 cup) water
  • 24 green prawns, peeled, tails intact
  • 200g dried rice stick noodles
  • 120g green beans, thickly sliced diagonally
  • 80g bean sprouts, trimmed
  • Fresh Thai basil, leaves picked, to serve
  • Lime wedges, to serve
Instructions:
  • 1. Preheat a large non-stick saucepan over medium heat. Sauté laksa paste for 30 seconds until fragrant. Pour in coconut milk and water, simmer for 3 minutes until fully blended. Finally, add prawns and cook for an additional 3 minutes until perfectly cooked.
  • Cook noodles according to package instructions and then drain them.
  • In each serving bowl, elegantly arrange a nest of noodles. Gently pour the flavorful laksa mixture around the noodles. Sprinkle beans, sprouts, and fresh basil on top. Serve with lime wedges for a burst of citrus flavor.
