Prawn and sweet potato noodle stir-fry recipe

Upgrade your prawn stir-fry by swapping wheat noodles for nutritious sweet potato noodles and loading it with colorful veggies.
Ingredients:
  • 8 Raw Sweet Chilli Prawn Skewers
  • 2 x 250g pkts Sweet Potato Noodles
  • 350g pkt Superfood Vegetable Mix
  • 60ml coconut
  • Coriander sprigs, to serve
Instructions:
  • Preheat a greased barbecue grill or chargrill over medium-high heat. Grill the prawns for 2-3 minutes on each side until they change color and develop a light char.
  • 1. Preheat a frying pan over medium-high heat and add sweet potato noodles. Saute for 3 minutes until tender. Transfer noodles to a heatproof bowl. 2. In the same pan, stir-fry the vegetable mix for 2 minutes until tender. 3. Return sweet potato noodles to the pan and add sweet chili sauce. Cook, tossing, for 1-2 minutes until heated through.
  • Plate the sweet potato noodle mixture, top with prawns, and garnish with fresh coriander sprigs.
