Quick and satisfying Korean sweet potato noodle salad ready in just 25 minutes.
Ingredients:
  • 86.63 gm lime juice
  • 48.80 gm fish sauce
  • 10.00 gm caster sugar
  • 1 long red chilli, thinly sliced
  • 2 x 100g packets Obap Sweet Potato Noodles
  • 125.00 ml roughly chopped fresh coriander leaves, plus extra to serve
  • 165.00 ml fresh Thai basil leaves, plus extra to serve
  • 500.00 ml shredded cooked chicken
  • 600g prawn
  • 2 gem lettuces, roughly chopped
  • 40.00 ml fried shallots
  • Lime wedges, to serve
Instructions:
  • In a large bowl, mix together lime juice, fish sauce, sugar, and chili.
  • Prepare the noodles as directed on the package. Drain them and promptly mix them with the dressing in a bowl. Ensure they are well coated to prevent sticking. Introduce onion, coriander, mint, basil, chicken, and prawns, gently combining everything.
  • Arrange crisp and fresh lettuce on a beautiful serving platter. Layer on the flavorful noodle salad, then generously sprinkle with shallots, fragrant coriander, refreshing mint, and aromatic basil. Serve with zesty lime wedges for a burst of citrus flavor.
