Warm potato salad with sweet chilli sour cream

Spicy sweet potato salad - perfect BBQ side dish.
Ingredients:
  • 1kg chat potatoes, halved, rinsed
  • 176.25 gm light sour cream
  • 44.00 gm sweet chilli sauce
  • 2 green onions, chopped
  • 62.50 ml coriander sprigs
  • 12.00 gm sesame seeds, toasted
Instructions:
  • Preheat oven to 200°C. Arrange potatoes in a large roasting pan in a single layer. Drizzle with oil, season with salt and pepper, and toss to coat evenly. Roast for 40 to 50 minutes, flipping halfway through, until golden and tender. Let cool for 5 minutes before serving.
  • Place the potato in a spacious bowl. In a separate container, mix sour cream, sweet chili, and green onion together. Drizzle the mixture over the potato and gently mix until well coated.
  • Place the potatoes elegantly on a platter. Generously sprinkle them with fragrant coriander and nutty sesame seeds. Enjoy alongside delicious barbecued sausages, chicken, or pork.
