Brighten up summer meals with a flavorful sweet potato salad, featuring tangy green onions, mustard, and balsamic vinegar for a delicious balance of flavors.
Ingredients:
  • 6 large sweet potatoes, peeled and diced
  • 4 large baking potatoes, peeled and diced
  • 0.5 cup mayonnaise
  • 0.25 cup Dijon mustard
  • 0.33333334326744 cup balsamic vinegar
  • 1 teaspoon ground turmeric
  • 1 tablespoon chopped chives
  • salt and ground black pepper to taste
  • 2 slices crisply cooked bacon, crumbled
  • 2 green onions, finely chopped
  • 1 red onion, finely chopped
Instructions:
  • In a Dutch oven, combine the diced sweet potatoes and potatoes with water and bring to a boil. Cook until the potatoes are easily pierced with a fork, approximately 20 minutes. Drain and let the potatoes cool slightly.
  • In a large bowl, combine mayonnaise, mustard, balsamic vinegar, turmeric, chives, salt, and pepper. Add bacon, green onions, red onion, and cooked potatoes, then toss to coat. Serve with a sprinkle of extra chives or green onion for garnish.
