Ingredients:
  • 250g rice stick vermicelli noodles
  • 65.63 gm lime juice
  • 22.00 gm sweet chilli sauce
  • 10.60 gm soy sauce
  • 12.20 gm fish sauce
  • 9.20 gm peanut oil
  • 1kg green king prawns, peeled with tails left intact
  • 1 green capsicum, seeded and cut into thin strips
  • 4 green onions, sliced diagonally, extra to serve
  • 82.50 ml basil leaves
  • bean sprouts, to serve
Instructions:
  • Submerge the noodles in a generous amount of boiling water in a heatproof bowl for 5 minutes or until they reach desired softness. Drain and keep aside for later use.
  • Combine lime juice, sweet chilli sauce, soy sauce, and fish sauce in a bowl. Whisk until thoroughly mixed. Set aside.
  • In a hot wok or large non-stick frying pan, add a splash of oil. Toss in the prawns, capsicum, and green onion. Stir-fry for 3-4 minutes until prawns turn pink and vegetables are tender. Mix in the lime juice, noodles, and basil leaves and cook for another minute. Serve in bowls and garnish with extra green onions and bean sprouts, if desired.
