Coconut prawns with mango mayonnaise

Savor these zesty lime and coconut prawn skewers with a side of tangy mango mayo.
Ingredients:
  • 16 large green prawns, peeled, deveined (tails intact)
  • 125.00 ml plain flour
  • 125.00 ml fresh breadcrumbs
  • 2 tsp lime zest
  • 20.00 ml fresh coriander leaves, chopped
  • 1 long green chilli, seeded, roughly chopped
  • 65.00 gm shredded coconut
  • Olive oil cooking spray
  • 247.50 gm whole-egg mayonnaise
  • 10.00 gm curry powder
  • 65.63 gm lime juice
  • 40.00 gm mango chutney
Instructions:
  • Preheat your oven to 220C/200C fan-forced and line a large baking tray with baking paper.
  • Skewer one prawn on each stick. Put flour in one dish and lightly beat eggs in another.
  • In a food processor, pulse breadcrumbs, zest, coriander, and chilli until finely chopped, about 1 minute. Transfer the mixture to a bowl and mix in the coconut until combined.
  • Coat prawns in flour, then dip in egg and coat in coconut mixture. Place on prepared tray, lightly spray with oil, sprinkle with sea salt, and bake for 10 to 12 minutes until crispy and fully cooked.
  • Prepare the Mango mayonnaise by mixing all the ingredients in a bowl. Serve the prawns with the mayonnaise on the side.
