Asian greens and juicy prawns with zesty lime and fresh mint, ready in just 25 minutes.
Ingredients:
  • 1kg raw banana prawns, peeled leaving tails intact, deveined
  • 18.40 gm vegetable oil
  • 2 tsp fresh ginger, grated
  • 2 bunches pak choy, halved lengthways
  • 2 bunches gai lan (Chinese broccoli)
  • 1/2 ripe pineapple, peeled, halved, cored, thinly sliced
  • 21.00 gm lime juice
  • 18.30 gm gluten-free fish sauce
  • 125.00 ml mint leaves
  • 1/4 red onion, thinly sliced
  • 1 long fresh red chilli, finely chopped
  • Steamed rice, to serve
Instructions:
  • Heat up the barbecue flat plate or a large frying pan on high heat. Combine prawns, oil, and ginger in a bowl and mix well. Dip the pak choy and gai lan in water, then grill on the barbecue for 1-2 minutes until lightly charred and tender. Transfer to a plate and cover with foil.
  • Barbecue the prawn mixture for 1 minute, then add pineapple and continue cooking until prawns change color. Stir in lime juice and fish sauce, ensuring everything is evenly coated. Transfer the mixture to a platter, then top with mint, onion, and chili. Toss gently to combine and serve with vegetables and rice.
