Sweet and Spicy Stir Fry with Chicken and Broccoli

Spicy garlic chili paste meets sweet hoisin and ginger, perfect over fragrant jasmine rice!
Ingredients:
  • 3 cups broccoli florets
  • 1 tablespoon olive oil
  • 2 skinless, boneless chicken breast halves - cut into 1 inch strips
  • 0.25 cup sliced green onions
  • 4 cloves garlic, thinly sliced
  • 1 tablespoon hoisin sauce
  • 1 tablespoon chile paste
  • 1 tablespoon low sodium soy sauce
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon crushed red pepper
  • 0.125 cup chicken stock
Instructions:
  • Steam broccoli in a covered steamer basket over simmering water for about 5 minutes, until tender but still crisp.
  • In a skillet over medium heat, saute chicken, green onions, and garlic in oil until chicken is cooked through and juices run clear.
  • Combine hoisin sauce, chile paste, and soy sauce in the skillet; season with ginger, red pepper, salt, and black pepper. Pour in the chicken stock and simmer for 2 minutes. Add steamed broccoli and mix until well coated with the sauce.
