Citrus-infused stir fry with sweet and spicy sauce tossed with chicken, carrots, and celery, topped with crunchy cashews.
Ingredients:
  • 1 tablespoon cornstarch
  • 2 teaspoons peanut oil
  • 2 stalks celery, chopped
  • 2 carrots, peeled and diagonally sliced
  • 1.5 pounds skinless, boneless chicken breast halves - cut into strips
  • 0.75 cup orange juice
  • 3 tablespoons light soy sauce
  • 1 teaspoon minced fresh ginger root
  • 0.25 cup cashews
  • 0.25 cup minced green onions
Instructions:
  • In a wok over high heat, sizzle 1 teaspoon of oil. Toss in the carrots and celery, stir fry for 3 minutes. Drizzle the remaining 1 teaspoon oil, then introduce the chicken and stir fry for an additional 5 minutes.
  • Combine cornstarch with orange juice in a small bowl until dissolved. Stir in soy sauce, honey, and ginger. Pour the sauce into the wok and simmer over medium heat until thickened. Garnish with cashews and green onions before serving.
