Sweet and Spicy Gochujang Chicken

Korean-inspired sweet and spicy chicken stir-fry with gochujang, honey, and rice.
Ingredients:
  • 1/3 cup gochujang (Korean hot pepper paste)
  • 4 tablespoons less sodium soy sauce
  • 2 tablespoons sweet rice wine (mirin)
  • 2 tablespoons honey
  • 3 cloves garlic, grated
  • 1 to 2 teaspoons sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon canola oil
  • 2 pounds skinless, boneless chicken thighs,cut into bite-size pieces
  • 1 1/2 teaspoons toasted sesame seeds
  • 3 tablespoons thinly bias-sliced green onions
  • 6 cups hot cooked rice
Instructions:
  • Prepare all your delightful ingredients.
  • Combine gochujang, soy sauce, sweet rice wine, honey, garlic, sesame oil, and ginger in a small bowl and mix until well blended.
  • In a wok or large skillet, heat oil over medium-high heat. Cook and stir half of the chicken until no longer pink, about 5 minutes.
  • Take out the chicken from the wok. Repeat with the rest of the chicken. Add all the cooked chicken back to the wok.
  • Ensure the sauce is stirred thoroughly before adding it to the wok. Cook and stir until the sauce thickens and becomes bubbly, approximately 3 minutes.
  • Sprinkle sesame seeds and green onions on top. Enjoy immediately with rice.
