Creamy basil-dressed cauliflower and broccoli salad with salty bacon and water chestnuts is a crowd-pleasing potluck favorite.
Ingredients:
  • 1 pound bacon
  • 2 cups mayonnaise
  • 0.33333334326744 cup grated Parmesan cheese
  • 0.25 cup white sugar
  • 0.5 teaspoon dried basil
  • 4 cups broccoli florets
  • 4 cups cauliflower florets
  • 1 large red onion, thinly sliced
  • 1 large head lettuce, cut into bite-size pieces
  • 2 cups seasoned croutons
  • 1 cup sliced water chestnuts
Instructions:
  • In a large skillet over medium-high heat, sizzle the bacon, turning occasionally, until perfectly crisp and golden, for about 10 minutes. Rest the bacon on paper towels to absorb excess grease.
  • In a large bowl, combine mayonnaise, Parmesan cheese, sugar, and basil, whisking until smooth. Add broccoli, cauliflower, and red onion, tossing to coat evenly. Chill the salad for at least 3 hours or overnight to let the flavors meld.
  • Crumble the bacon and toss it with the lettuce, croutons, and water chestnuts to create a delicious salad.
