Introducing a tasty Broccoli and Cheddar Quesadilla that will turn your picky eaters into fans, with a zesty pico de gallo to add a kick for the adventurous eaters.
Ingredients:
  • For the quesadilla:
  • 2 cups broccoli florets
  • 12 ounces grated cheddar cheese (about 4 loosely-packed cups)
  • 4 large 12-inch flour tortillas
  • Vegetable oil, for tortillas
  • 1 medium avocado, sliced thin or chopped for serving
  • Sour cream, for serving
  • DAD ADD: Quick Spicy Pico de Gallo
  • 1/2 red onion, minced
  • 1 ripe tomato, minced
  • 1 jalapeño, seeded and minced
  • Fresh lime juice
  • Pinch kosher salt
Instructions:
  • Prepare the broccoli: Boil water with a pinch of salt, quickly blanch the broccoli until vibrant and tender (around 3 minutes), drain, cool, and finely chop.
  • Prepare the pico de gallo by finely chopping the Dad Add. Combine all the minced ingredients in a bowl and set aside.
  • Preheat a large skillet over medium-low heat and grate the cheese, if not already done.
  • Prepare the quesadillas by brushing one tortilla with oil, placing it oil side down in a warm skillet. Add a generous cup of grated cheese on one half of the tortilla, followed by 1/2 cup of chopped broccoli. Fold the tortilla in half to create a half-circle shape. Cook for about 3 minutes on each side until crispy and cheese is melted. You can cook two at a time in a large skillet if desired. Enjoy your delicious quesadillas!
  • Cut the quesadillas into triangle segments and serve with sour cream, avocado, and spicy pico.
