Easy, flavorful broccoli Cheddar quiche with Dijon mustard, oregano, and thyme - perfect for a quick brunch or dinner.
Ingredients:
  • 1 (9 inch) deep dish prepared pie crust
  • 1 teaspoon vegetable oil, or as needed
  • 2 cups finely chopped broccoli
  • 4 eggs
  • 0.5 cup milk
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.5 teaspoon dried thyme
  • 0.5 cup shredded Cheddar cheese
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and prepare a baking sheet by lining it with aluminum foil.
  • Place pie crust in a 9-inch deep pie dish and pierce it all over with a fork, then brush with oil before transferring it to a baking sheet.
  • Place the crust in the hot oven and bake for 8 minutes.
  • Transfer broccoli to a bowl and microwave on high until vibrant green and slightly tender, which should take about 4 minutes. Combine eggs, milk, Dijon mustard, oregano, salt, pepper, and thyme in another bowl. Fold in the cooked broccoli. Pour the mixture into the crust, top the quiche with Cheddar and Parmesan cheeses, then place the pie dish on a baking sheet.
  • Bake the quiche for about 40 minutes until a knife inserted in the middle comes out clean. Allow it to rest for 10 minutes before slicing.
