Family-friendly broccoli quiche - a satisfying meal for any time of day.
Ingredients:
  • 1 head of broccoli (375g)
  • 6 large eggs
  • 1 heaped teaspoon English mustard
  • 300 g cottage cheese
  • 50 g Cheddar cheese
  • 3 tablespoons red pesto
  • 270 g filo pastry
Instructions:
  • Preheat the oven to 180°C/350°F/gas 4. For the filling, trim and grate the broccoli stalk, then separate the florets. Beat the eggs, mix with mustard, cottage cheese, grated broccoli stalk, Cheddar, salt, and pepper. Thin the pesto with 3 tablespoons of water. Layer oiled tart tin with pastry sheets, brushing each layer with pesto. Roll filo pastry around the edges. Pour in the filling, add broccoli florets, and bake at the bottom of the oven for 50 minutes until golden and set. Rest for 10 minutes before serving.
