Succulent slow cooker pot roast with veggies - easy and comforting.
Ingredients:
  • 6 medium potatoes
  • 1 medium yellow onion
  • 2 stalks celery
  • 1.5 cups baby carrots
  • 1 (3 pound) beef roast
  • 3 cubes beef bouillon
  • 0.5 cup water
Instructions:
  • Prepare all your fabulous ingredients.
  • Roughly chop potatoes, onions, and celery; add to the slow cooker with baby carrots. Lay the roast on top of the vegetables. Sprinkle 3 bouillon cubes over the roast and pour 1/2 cup water into the cooker.
  • Cook the roast covered on Low for 6 to 8 hours or on High for 4 to 5 hours until an instant-read thermometer reads 145°F (65°C) when inserted into the thickest part of the roast.
  • Place the roast on a serving platter and use a slotted spoon to arrange the vegetables around it elegantly.
