Refreshingly creamy summer salad with broccoli, cauliflower, crispy bacon, and melty mozzarella, tossed in a mayo dressing.
Ingredients:
  • 1 (16 ounce) package bacon
  • 1 head cauliflower, chopped
  • 1 head broccoli, chopped
  • 1 (8 ounce) package shredded mozzarella cheese
  • 1 small onion, chopped
  • 0.25 cup white sugar
  • 2 tablespoons milk
  • 1.5 cups mayonnaise
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons vinegar
Instructions:
  • In a spacious skillet, sizzle the bacon over medium-high heat, giving it a occasional flip, until beautifully browned, for around 10 minutes. Let it rest on paper towels before crumbling the slices into small, delightful pieces. Set aside 1/2 cup of the bacon pieces in a bowl for later use.
  • In a large bowl, mix together the leftover bacon, cauliflower, broccoli, mozzarella cheese, and onion.
  • Combine sugar and milk in a small bowl until sugar dissolves. Add mayonnaise, Parmesan cheese, and vinegar, then pour the dressing over the cauliflower mixture. Sprinkle with reserved bacon and refrigerate for 1 hour before serving.
