Broccoli Olive Calzones

Indulge in cheesy broccoli and olive calzones with pizza dough – a delicious Italian-inspired meal on the move!
Ingredients:
  • 2 teaspoons olive or vegetable oil
  • 1 medium onion, chopped (1/2 cup)
  • 1/2 bag (16-ounce size) frozen chopped broccoli, thawed and drained
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon garlic salt
  • 1/4 cup water
  • 1 can (2 1/4 ounces) sliced ripe olives, drained
  • 2/3 cup ricotta cheese
  • 2/3 cup shredded provolone cheese
  • 1/2 teaspoon pepper
  • 2 cans (10 ounces each) refrigerated pizza crust dough
Instructions:
  • Preheat the oven to 425°F. In a large nonstick skillet, heat oil over medium-high heat. Sauté the onion for about 5 minutes, stirring occasionally, until tender.
  • Combine the broccoli, thyme, and garlic salt in the pot. Pour in the water. Cook without a lid for 5 minutes or until the liquid is absorbed. Stir in the olives and take the pot off the heat. Combine the egg, cheeses, and pepper.
  • Flatten each can of dough into an 11-inch square, then cut each into 4 smaller squares. Spread 1 1/2 tablespoons of cheese mixture on each square, leaving a 1-inch border. Add a heaping 1/4 cup of broccoli mixture on top. Fold the squares in half diagonally, then pinch the edges closed.
  • Place on a clean, ungreased cookie sheet and bake for about 15 minutes, or until the cookies turn a beautiful golden brown color.
