Winter calls for cozy meals like this hearty broccoli rabe pasta soup, packed with nourishing ingredients for a satisfying meal.
Ingredients:
  • 1 bunch broccoli rabe
  • 18.20 gm olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 400g can diced tomatoes
  • 1275.00 gm chicken style liquid stock or vegetable liquid stock
  • 80g pasta
  • 400g can cannellini beans, rinsed, drained
  • Crusty bread, to serve
  • Salt & freshly ground pepper
Instructions:
  • Prepare the broccoli rabe by separating the leaves from the stems. Finely slice the stems and shred the leaves. In a large saucepan over medium heat, heat the oil. Sauté the onion until soft, about 3-4 minutes. Add the garlic and cook for an additional minute.
  • Combine tomatoes and stock in a pot and bring to a boil. Then, add the pasta and cook for 15 minutes, or until al dente. Toss in the stems 3 minutes before the pasta is done cooking.
  • Add cannellini beans and shredded leaves into the mixture and cook until the leaves are wilted. Season generously with salt and pepper, and serve promptly with crusty bread.
