Broccoli rabe pasta salad

Try this deliciously tangy salad featuring the unique bitterness of broccoli rabe, a member of the turnip family, not broccoli.
Ingredients:
  • 500g small bowtie pasta
  • 100g sun-dried tomatoes
  • 1 bunch broccoli rabe, finely shredded
  • 4 shallots, trimmed, sliced
  • 100g pine nuts, toasted
  • 1 tsp dried oregano leaves
  • 9.20 gm extra light olive oil
  • 125ml italian salad dressing
Instructions:
  • Prepare the pasta as directed on the package in boiling salted water. Once cooked, rinse the pasta under cold water and thoroughly drain.
  • Cut the sun-dried tomatoes into thin strips. Combine them with broccoli rabe, shallots, pine nuts, and oregano in a large bowl.
  • Mix the olive oil into the pasta, then incorporate the broccoli rabe mixture. Chill until serving time. Just before serving, drizzle the dressing over the pasta and mix well to coat.
