Broccoli Rabe with Caramelized Onions

Turn bitter broccoli rabe into a delicious side dish: sauté with caramelized onions and chili pepper for a flavor boost.
Ingredients:
  • 3 tablespoons extra virgin olive oil
  • 1 yellow onion, sliced into slivers, lengthwise (with the grain)
  • 1 large bunch of broccoli rabe (raab, rapini) , rinsed and cut into 2-inch long pieces
  • 2-3 garlic cloves, sliced
  • 1/4 teaspoon red chili flakes
  • Freshly ground black pepper
Instructions:
  • Sauté the onions: In a large sauté pan over medium heat, heat 2 tablespoons of olive oil. Add the onions in a single layer and sauté until softened and lightly browned, stirring occasionally. To speed up caramelization, sprinkle a pinch of sugar over the onions. If they start to dry out, lower the heat and add a bit of water to prevent drying. Aim for browned onions without drying them out.
  • Prepare the broccoli rabe: Bring a large pot of salted water to a boil. Blanch the rabe for 1 minute, then transfer to an ice bath to stop the cooking and maintain its vibrant green color. Drain and gently squeeze out excess moisture with a tea towel.
  • Sauté the rabe and onions with chili flakes and garlic: Once the onions are lightly browned, transfer to a bowl. In the same pan, heat another tablespoon of olive oil over high heat. Add chili flakes and sizzle, then add garlic. Once lightly browned, add broccoli rabe and onions. Toss to coat in oil, cooking on high heat until most moisture evaporates, about 5 minutes if blanched, slightly longer if not. Season with salt and pepper before serving.
