Broccolini with anchovy almonds

Delicious and nutritious gluten-free side dish ready in 10 minutes!
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 2 garlic cloves, thinly sliced
  • 2 tsp lemon rind, finely grated
  • 1 long fresh red chilli, deseeded, finely chopped
  • 4 anchovies in oil, chopped
  • 40g (1/4 cup) natural almonds, coarsely chopped
  • Squeeze of fresh lemon juice
  • 2 bunches broccolini, trimmed
Instructions:
  • In a large frying pan over medium heat, heat the oil until shimmering. Saute the garlic, lemon rind, chili, and drained anchovies, stirring constantly for 30 seconds until fragrant. Toss in the almonds and cook for another minute. Remove from heat and finish with a splash of lemon juice.
  • Steam the broccolini over gently simmering water until tender-crisp, about 2-3 minutes. Drain and transfer to a serving plate. Sprinkle with the almond mixture before serving.
