Vibrant veggies, shrimp, peas, and lasagna noodles tossed in a delightful pesto pasta.
Ingredients:
  • 1 (12 ounce) package lasagna noodles, broken into 2-inch pieces
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1 cup frozen sweet peas
  • 1 tablespoon olive oil
  • 0.5 cup chopped yellow onion
  • 0.5 cup chopped red bell pepper
  • 0.5 cup chopped yellow bell pepper
  • 3 cloves garlic, finely chopped
  • 1 (7 ounce) container basil pesto
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon ground black pepper
  • 0.5 cup shaved Parmesan cheese
Instructions:
  • In a large pot, boil 12 cups of salted water. Add pasta and cook for 12 minutes. During the final 2 minutes, toss in shrimp and peas. Drain pasta, saving 1/2 cup of cooking water in a glass measuring cup. Place the pasta back in the pot.
  • Heat oil in a small skillet over medium-high heat, then sauté onion and bell peppers until softened, about 6 to 8 minutes. Stir in garlic and cook for an additional minute.
  • Combine the onion mixture, pesto, salt, and pepper with the pasta. Stir well. Heat over low heat and gradually mix in reserved cooking water as required until you achieve the desired consistency and the mixture is heated through. Serve promptly and garnish with Parmesan cheese.
