Noodle risotto: Toast pasta for nutty flavor, add broth gradually for ultimate taste.
Ingredients:
  • 1 tablespoon olive oil
  • 8 ounces uncooked spaghetti, broken into 1 inch pieces
  • 1.5 cups chicken broth, divided
  • 0.5 teaspoon red pepper flakes, or to taste
  • salt to taste
  • 2 tablespoons freshly grated Parmigiano-Reggiano cheese, or to taste
  • 1 tablespoon chopped fresh flat-leaf parsley
Instructions:
  • In a saucepan over medium heat, toast spaghetti in oil until golden brown, stirring constantly for 3 to 5 minutes.
  • Add fragrant garlic to the spaghetti and sauté for 30 seconds.
  • Add 1/2 cup broth into the pot and raise the heat to medium-high. Stir the spaghetti and broth continuously until the liquid is fully absorbed, approximately 2 to 3 minutes. Continue this method until all the broth is absorbed and the noodles reach your preferred tenderness, approximately 10 minutes.
  • Lower the heat and gently season the spaghetti with red pepper flakes and salt to your liking, then remove from the heat.
  • Combine the savory Parmigiano-Reggiano cheese and fresh parsley into the spaghetti for a delectable finish before serving.
