Brooke's Cinnamon Roll Cookies

Betty Crocker sugar cookie dough mixed with cinnamon sugar, drizzled with icing - heavenly cinnamon roll cookies.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 5 tablespoons butter, softened
  • 1 egg
  • 1/3 cup granulated sugar
  • 1 1/2 teaspoons ground cinnamon
  • 2 tablespoons butter, melted
  • 1 cup powdered sugar
  • 1 tablespoon butter, melted
  • 1/4 teaspoon vanilla
  • 1 to 2 tablespoons milk
Instructions:
  • Preheat oven to 350°F. Combine Cookie ingredients in a medium bowl using a fork until a soft dough forms. Roll out the dough on a lightly floured surface with a rolling pin until it's about 1/4-inch thick.
  • In a small bowl, combine the Cinnamon-Sugar ingredients. Sprinkle the cinnamon-sugar mixture evenly over the cookie dough. Roll up the dough into a tight spiral and cut into 1-inch slices. Arrange the slices on ungreased cookie sheets.
  • Bake for 8 to 10 minutes until firm. Transfer from baking sheets to wire racks. Allow to cool as you prepare the icing.
  • Combine the Icing ingredients in a small bowl until smooth, adding milk as needed for piping consistency. Transfer the icing to a resealable plastic bag, seal it, and snip off a tiny corner. Pipe the icing over each cookie and allow it to set before serving or storing.
