Quick and easy 25-minute flaky fish main course - a delightful dinner option!
Ingredients:
  • 1/4 cup all-purpose flour
  • 1 lb tilapia fillets, about 1/2 inch thick, cut into 4 serving pieces
  • 1/2 teaspoon salt
  • 1 teaspoon lemon-pepper seasoning
  • 1/4 cup butter*
  • 1 bag (9 oz) washed fresh baby spinach leaves
  • 1/2 red bell pepper, cut into thin slivers
  • 1/4 cup slivered almonds, toasted**
Instructions:
  • Place a layer of flour in a shallow dish. Season the fish with salt and lemon-pepper seasoning, then coat the fish by dipping it in the flour.
  • In a 12-inch nonstick skillet, cook butter over medium heat for 3 to 4 minutes until it turns a light golden brown, stirring constantly. Add the fish and cook for 6 to 8 minutes, turning it once, until the outside is browned and the fish flakes easily with a fork. Transfer to a plate and cover to keep warm.
  • Combine fresh spinach and colorful bell pepper pieces in a sizzling skillet with melted butter. Sauté for 2 to 4 minutes, stirring occasionally, until they are tender. Serve the flavorful spinach mixture on 4 dinner plates, layering it with the fish of your choice. Finish off by sprinkling the dish with crunchy almonds for added texture.
