Indulgent pear and walnut cake with luscious brown butter icing - the perfect dessert for cooler months.
Ingredients:
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 1.5 cups white sugar
  • 1 cup vegetable oil
  • 2 cups peeled and diced pears
  • 1 cup chopped walnuts
  • 0.5 cup butter
  • 2 cups confectioners' sugar
  • 3 tablespoons water
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C), while you lovingly grease and flour a 10-inch tube pan.
  • In a large bowl, combine flour, baking soda, salt, cinnamon, and nutmeg to create a flavorful mix.
  • Using an electric mixer, whip sugar and eggs until light and fluffy, about 3 minutes. Add oil and 1 teaspoon vanilla extract and mix well. Gradually incorporate the flour mixture until batter is smooth. Gently fold in pears and walnuts, then transfer batter to the tube pan.
  • Bake in the oven preheated until a toothpick inserted into the center comes out clean, for 50 to 55 minutes. Cool in the pan for 10 minutes, then invert onto a wire rack to cool completely for about 30 minutes.
  • In a saucepan over medium-low heat, melt the butter until rich brown and fragrant, stirring continuously for about 5 minutes. Remove from heat and mix in confectioners' sugar and 1 teaspoon vanilla extract until the icing is thick and smooth. Gradually add water, 1 tablespoon at a time, to achieve your preferred consistency. Drizzle the icing over the cooled cake.
