Chef John's easy pan-fried perch in hot brown butter is a simple, delicious must-try!
Ingredients:
  • 1 cup flour
  • 0.5 teaspoon finely ground black pepper
  • 0.5 teaspoon cayenne pepper
  • 8 ounces fresh perch fillets
  • 1 lemon, cut in half
Instructions:
  • Combine flour, salt, black pepper, and cayenne pepper in a shallow bowl. Dredge perch fillets in the seasoned flour mixture, ensuring they are evenly coated and shaking off any excess flour.
  • In a skillet over medium heat, melt butter until it turns a golden nut-brown color. Cook fillets in batches in the browned butter until golden on each side, about 2 minutes per side. Plate the cooked fillets, drizzle with lemon juice, and serve.
