Buttery, aromatic cookies with rich flavor and chewy texture from browned butter, vanilla bean paste, and oats.
Ingredients:
  • 1 cup unsalted butter
  • 1.75 cups all-purpose flour
  • 0.75 cup quick cooking oats
  • 1 teaspoon baking soda
  • 1 cup packed brown sugar
  • 0.5 cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla bean paste
  • 2 cups semisweet chocolate chips
Instructions:
  • In a stainless steel saucepan over medium heat, melt the butter until it turns a nutty brown, whisking frequently. Once the aroma shifts and browned bits form at the bottom, promptly remove from heat and pour the browned butter into a large mixing bowl.
  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Combine flour, oats, salt, and baking soda in a bowl, whisk until well mixed, and set aside.
  • Combine both sugars with the browned butter and cream together using an electric mixer until smooth. Gradually add eggs one by one, mixing well after each addition. Incorporate vanilla bean paste and beat for an additional minute. Add flour mixture in 3 parts, stirring well after each addition. Gently fold in chocolate chips.
  • With a 1 1/2 tablespoon spring-hinged scoop, neatly place dough 2 inches apart on the baking sheet.
  • Bake in the preheated oven for about 13 minutes until the edges are lightly golden. Transfer the cookies to wire racks to cool.
