Elevate oatmeal cookies with decadent brown butter and gooey chocolate chips.
Ingredients:
  • 1 cup butter
  • 1 cup light brown sugar, packed
  • 0.5 cup white sugar
  • 2 teaspoons vanilla extract
  • 3 cups quick-cooking oats
  • 1.75 cups all-purpose flour
  • 1 cup semisweet chocolate chips
Instructions:
  • In a saucepan over medium heat, melt the butter until it turns golden brown as you swirl the pan occasionally, which should take about 5 minutes. Transfer the browned butter to a bowl and let it cool.
  • Preheat your oven to a toasty 325 degrees F (168 degrees C).
  • In a large bowl, combine browned butter, brown sugar, and white sugar, beating until smooth and creamy. Add one egg, mix until smooth; then add the second egg and vanilla extract, beating until smooth and uniform in color.
  • Combine oats, flour, baking soda, and salt in a bowl. Incorporate into the browned butter mixture until a cookie dough forms. Gently fold in chocolate chips. Spoon dough by heaping teaspoonfuls onto baking sheets.
  • Bake in the preheated oven for about 12 minutes until edges and bottoms turn golden brown. Allow to cool on sheets for 10 minutes, then transfer to wire cooling racks to cool completely.
