Bistro Brown Butter Chocolate Chip Cookies

Gourmet chocolate chip cookies with browned butter and vanilla bean paste for a delicious twist.
Ingredients:
  • 1 cup unsalted butter
  • 2.5 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup brown sugar, packed
  • 0.5 cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla bean paste
  • 2 cups semisweet chocolate chips
  • 1 cup toasted chopped pecans
Instructions:
  • In a stainless steel saucepan, melt the butter over medium heat. Stir frequently until the butter turns nutty and browned, and small brown bits form at the bottom. Remove the pan from heat and pour the browned butter into a large mixing bowl.
  • Preheat the oven to 350°F (175°C) while lining a cookie sheet with parchment paper.
  • Combine the flour, salt, and baking soda in a bowl and whisk until well blended.
  • Combine brown and white sugars with the browned butter, beating until smooth. Add eggs one at a time, beating well after each addition. Mix in vanilla bean paste for 1 minute. Gradually add the flour mixture to the butter-sugar mixture in thirds, stirring thoroughly after each addition. Gently fold in chocolate chips and pecans.
  • Use a 1 1/2 tablespoons scoop to divide the dough and space each piece 2 inches apart.
  • Bake until edges are golden, around 13 minutes in the preheated oven. Let cool on the baking sheet before transferring to a wire rack to cool completely.
