Elevate classic potato salad with zesty garlic, crunchy walnuts, and tangy bistro dressing.
Ingredients:
  • 24 small red potatoes (about 4 pounds), cut into wedges
  • 2 tablespoons beef bouillon granules
  • 6 cloves garlic, finely chopped
  • 6 cups water
  • 3/4 cup coarsely chopped walnuts, toasted
  • 8 medium green onions, sliced (1/2 cup)
  • 1/3 cup olive or vegetable oil
  • 2 tablespoons red wine vinegar
  • 4 teaspoons Dijon mustard
  • 1/2 teaspoon Cajun seasoning or lemon pepper
Instructions:
  • Place potatoes, bouillon granules, and garlic in a 3-quart saucepan. Add water, cover, and bring to a boil. Reduce heat to low and simmer covered for about 15 minutes until potatoes are tender.
  • Chill cooked potatoes in their liquid for at least 3 hours in the refrigerator until cold. Drain the potatoes and mix in walnuts and onions.
  • Combine all dressing ingredients in a sealed container and shake vigorously until thoroughly blended. Drizzle the dressing over the potato mixture and gently combine.
