Pan-fried kingfish with cabbage and bacon

Delicious and simple bistro meal for your weekly menu.
Ingredients:
  • 25g unsalted butter
  • 4 rashers bacon, chopped
  • 60ml white wine
  • 375ml chicken stock
  • 1/4 large savoy cabbage, finely shredded
  • 2 thyme sprigs, plus extra to garnish
  • 4 x 150g skinless kingfish fillets
  • Mashed potato, to serve
Instructions:
  • In a pan over medium-high heat, combine butter and 1 tablespoon oil until melted. Cook bacon, stirring occasionally, for 5-6 minutes until lightly golden. Pour in wine and stock, simmer for 2-3 minutes. Add cabbage and thyme, cover, and cook for 8-10 minutes until tender. Season to taste.
  • Heat the remaining 2 tablespoons of oil in a pan. Season the fish and cook each side for 2-3 minutes until cooked through. Serve with cabbage and mashed potatoes. Garnish with fresh thyme.
